With a great wine tradition, Piedmont seduces with its hills clinging to the vineyards and the diversity of wines that can be found there, with a quantity of quality « vignaioli » that perpetuate a peasant life attentive to a craftsmanship perfected over generations.
The noble heart of Piedmont lies in the southernmost area, in the Langhe, around the town of Alba, capital of the white truffle, between the two prestigious wine areas of Barolo and Barbaresco. But Piedmont is not limited to its noble flags. The ancient vineyards of Monferrato, the Astigiana area around Canelli, the Tortonese area, Alto Piemonte with the Ghemme, Gattinara and Boca appellations of origin, but also the moscato of Asti, the whites of Roero show the diversity of production that has existed historically. The Piedmontese vineyard is fragmented, the vineyard has always been part of a system of polyculture, where the farmer rented the land from the nobles to produce, often without being able to make a sufficient profit. Barolo will be the exception, since the fame achieved by Piedmontese wines has encouraged and economically sustained the small farms of today. Although Nebbiolo is the most famous grape variety in northern Italy, wines made from this variety account for only 3% of red wine production, which is essential and exclusive to the Barolo and Barbaresco appellations, wines for celebrations and not for every meal, where a gluttonous Dolcetto or a refreshing Barbera is favoured. Historically, Nebbiolo was aged in old, large-volume wood, but barrels have only recently arrived in the region and their use is considered a sin by traditionalists. Classic producers age Nebbiolo in barrels of 20 to 40 hl, where it can be aged for one and a half years for Langhe Nebbiolo, three and a half years for Barolo and seven years for Barolo Riserva.
NEW PRODUCERS
Domaine Aupilhac | Languedoc
Domiane Aupilhac was one of the producers we started working with at the beginning of Os Goliardos’ life, in 2005, but there was a pause so that now we have visited them again and they remind us how good their wines are, just as much as Sylvain and Désirée. They’re back!
It was in 1989 that Sylvain Fadat began his career as a winemaker, and he is the fifth generation of winemakers in his family. The son of geologist parents with a passion for birds and the natural sciences, he inherited an acute sensitivity to nature, fauna and flora. He started out as a polyculturist in 1989, selling melons, asparagus, tomatoes and fruit to complement the 4.5 hectares of vineyards he cultivated in Montpeyroux. Today, with the invaluable help of Désirée, originally from the Valencia area in Spain, they cultivate 25 hectares of vineyards 40 kilometres north of Montpellier and at the foot of the Larzac mountain, divided into two different main terroirs:
– Aupilhac, which means the house of the fox in Latin, is 12.5 hectares of clay with limestone marl exposed to the south at 120 kilometres, which provides good water retention in summer, with vineyards planted between 1945 and 2022.
– Cocalières, etymologically a circus where crows circle, is a 12.5-hectare amphitheatre at an altitude of 350 metres, with vineyards exposed to the north and north-east, planted in 1999 in a soil of limestone and dolomite (a sedimentary rock of marine origin rich in magnesium and calcium), which has a ripening cycle 15 days later than in Aupilhac.
Since 2003, Desirée, a trained nurse, and Sylvain have run the farm in organic farming and since 2012 they have followed biodynamic principles. The vineyard includes all the Languedoc grape varieties, with Carignan, Mourvèdre, Grenache, Cinsault, Alicante and Syrah in red, and Roussanne, Marsanne, Clairette, Rolle, Grenache blanc and gris, Ugni blanc and Carignan blanc in white. The couple convey great energy and attention to every detail. Désirée represents Spanish fire and enthusiasm, while Sylvain, whose name means madman in Occitan, symbolises perseverance and passion for his territory. With this determination, the wines are deep and digestible and Montpeyroux will soon achieve its well-deserved status as Cru of the Languedoc.

Ferme de Lyonnière – Jérôme Forget (Normandie) – POIRES AND SIDRES
Normandy is a major tourist attraction and its diversified production of cider and pears is yet another attraction. Jérôme Forget calls himself a farmer and it was in 1993 that he settled on this farm, which had bicentenary pear trees that he supplemented with new plantations of old varieties and where he grazes the cows he raises to complete the farm’s picture. The trees are not treated with chemicals. He produces a range of poirés and ciders which, due to their combination of fruitiness and astringency, are intended to accompany meals and not be limited to the restrictive pairing, in his opinion, of ciders with crepes. The production range includes poirés with and without sulphur dioxide, ciders and fruit juices, and we are captivated by yet another Normandy producer who expresses the area’s beautiful ancient heritage in drinks that refresh and brighten working days. Fermented juices that celebrate the arrival of spring and the thirst that accompanies it.
