Euforia (Mencia)
Mencia/Jaen on granite soils with patches of schist and clay caused by marine sedimentation. Destemmed, vinification for 8 to 10 days in 1250-litre chestnut casks until completely dry. Aged on primary lees in these casks for 12 months and in bottle for a further 9 months. No filtration.
