100% Syrah, vines between 20 and 40 years old on limestone marl soils in Brézème, south-facing. Whole bunch maceration for 6 to 8 days, fermentation with indigenous yeasts in open cement vats. No added sulphur before bottling. Ageing in cement vats on the fine lees for 18 to 24 months. Bottled without fining or filtration.
