Le Clau
Syrah over 70 years old, known locally as “serine”. Classic Northern Rhône granite profile. Whole bunch maceration for 6 to 8 days. Fermentation with indigenous yeasts in demi-muids. Ageing on the lees for 18 months. No added sulphur. Bottled by hand.
