Varied grape varieties from three different plots of ‘hard ground’ (not sandy, therefore not suitable for DOC), located in the parishes of Colares, São João das Lampas and São Martinho – the geographical area of the Colares region. Places with different types of bedrock, extremely close to the Atlantic and the Serra de Sintra massif. Spontaneous fermentation in stainless steel tanks. Grapes destemmed, with 5-day tanning. Ageing for 10 months in 1500 litre chestnut and mahogany barrels.
