Jerez

This family winery was created at the end of the 19th century by the brothers Primitivo and Tomas Collantes, originally from Santander and who chose Chiclana to develop the production of Jerez wines. Today he is Primitivo Collantes, a young and dynamic producer who contributes to the new movement of Jerez wines, which takes care of this farm with 55 ha of its own vineyards in some of the area’s famous crudes such as Pozo Galván, Matlián and El Inglês. The calcareous soils called albariza that allow the retention of moisture for the warmer months, the Atlantic winds that provide freshness at night and favor the humidity necessary for the formation of yeasts and the fine Palomino grape contribute to the ventilated cellar with wines matured in solera (pyramid of barrels from the most recent wines above to the oldest ones below) producing wines that are very impregnated in locality and history, whether familiar or local. They are dry wines, in Fino version (Arroyuelo or Arroyuelo en rama (bottled without filtration) that combine with varied starters, ham, olives, dry and cured cheeses as there are generous wines such as Amontillado Fossi that can be drunk as an aperitif (for the strong taste) and drier than Madeira or Porto) or with a dessert of dried fruit and buttery cheeses, wines with history that speak of the diversity of European wine tradition.
