Sabrina and Stefano, who met in 2013, started producing wines in 2017 on Monte Amiata, an ancient volcano between Montalcino and the Maremma, in a polyculture area where the vineyards are very fragmented and coexist with fruit trees, chestnut trees, cherry trees and ancient olive trees. This rich and diverse territory is an area of ​​hills, between 400 and 800 m in altitude, in wild and diverse landscapes. The soils are diverse and vary greatly from plot to plot, having in common an important presence of galestro (a shale clay typical of Tuscany), but also patches of sand and more yellowish limestone. Ancient viticulture in the area provides several small vineyards between 20 and 100 years old, in a panorama that oscillates between more closed and humid lowlands and ventilated plateaus. Historically, there have been many white varieties: Trebbiano toscano, Malvasia bianca and Vermentino, while Sangiovese is the predominant red variety with Ciliegiolo. La Stesa today naturally cultivates 7 different plots between 20 and 65 years old. The first wine launched is called Yntro, in reference to Sabrina’s initial professional training in music, the first wine produced in common that announces others (such as white and another type of red) and the shape of the Y that represents a tuning fork or a chalice. It is 100% Sangiovese, macerated for 3 weeks, which ages for 22 months in used 500 l barrels before spending 4 months in stainless steel to prepare for bottling.
