Stéphanie Caslot is the last wine-growing sapling of a family, the Caslots, who have lived on the vine since 1600 in Restigné under the Bourgueil designation of origin in the Loire. With his father Pierre, a theatrical and bon-vivant character, in the pure tradition of the writer Rabelais from the nearby village of Chinon, and his brother Emmanuel, they cultivate 38 ha in organic farming, entirely dedicated to Cabernet-Franc. The intense work they do in the vineyards does not prevent them from always receiving visitors with extreme availability in the sublime underground limestone cellar, suitable for great tasting. The variety of soils they cultivate dictates the different profiles of wines they produce. tender, sweet and fruity on stony and sandy alluvial soils (Vinho Cassiopée 2009), dense, tannin and guard on clay soils with hillside sand (Chevalerie 2006, Galichets 1996) or clay-limestone hillsides (Busardières 2006).
