Pinot Noir from 25-30-year-old vineyards, on light, clay-limestone soil with little clay, very stony, south/south-east facing.
Hand-picked, sorted in the vineyard. Vatted as whole bunches or destemmed, or both, depending on the vintage.
Some punching down. Alcoholic fermentation with indigenous yeasts, then devatting and blending of free-run juice and press juice.
Aged in barrels for 10 months. No sulphur added before the end of alcoholic and malolactic fermentation.
Adjustment before bottling. No fining or filtration.
