A blend from 8 plots (0.9 ha) in the communes of Marçon, Lhomme and Dissay-sous-Courcillon. Pineau d’Aunis vines over 100 years old on flinty clay soils over tuffeau limestone.
Alcoholic fermentation in vats with foot-treading. Pneumatic pressing. Natural cold settling. Natural fermentation with indigenous yeasts and malolactic fermentation in barrels. Aged in 500-litre barrels for 24 months.
