85% Pinot Noir and 15% César from 25-30-year-old vines, clay-loam soil on grey marl, south-facing.
Hand-picked, sorted in the vineyard. Grapes placed in vats as whole bunches or destemmed, or both, depending on the vintage.
Some punching down. Alcoholic fermentation with indigenous yeasts, then devatting and blending of free-run juice and press juice. Aged in barrels for 10 months.
No sulphur added before the end of alcoholic and malolactic fermentation. Adjustment before bottling.
No fining or filtration.
