Pommard 1er Cru Les Croix Noires
Vinification with stems. Fermentation begins at low temperature, with daily pigeage and pumping over, followed by a long maceration of around 30 days to fully extract the matter. After fermentation, carbonic maceration takes place, and ageing in wood lasts between 21 and 23 months. No fining or filtering.
Parcel located north of Les Frémiers, with deeper soil and east-west exposure. Vines planted in the mid-1980s, producing wines with significant tannin concentration and a fruity expression marked by ripe black cherry.
