Arenae Malvasia 50cl
Malvasia ungrafted 1km from the sea. Harvested at the end of September. Destemmed and pressed. Light skin maceration, inside the press, for 6 hours. The resulting wort was cooled (6oC) and decanted overnight. Fermentation in stainless steel, for 16 days, at a temperature of 15-16oC. It remained in a vat with bâtonnage (12 months). Aging in wood barrels for 6 months.
