100% Merlot. Vines planted in 1989 on a plot in Arsac with Cabernet Sauvignon (1.12 ha) and Merlot (1.41 ha) grape varieties.
Destemmed, uncrushed grapes, fermentation in cement vats, aged for 12 months in 400-litre barrels and 12-hectolitre casks, without racking in a reducing environment.
The name Nout refers to the sky in biodynamic symbolism.
