As with Roland Piollot’s Champagnes — with whom Dominique Moreau shares his life and vineyards — his approach focuses on revealing the identity of the Polisot terroirs in the Côte des Bars through single-vintage Champagnes, thus highlighting the character of the year and the plot.
The 4 hectares of vines are cultivated according to biodynamic principles. The Kimmeridgian limestone soil brings the Côte des Bars closer to the terroirs of Chablis than to the classic Champagne region around Épernay. Pinot Noir finds a particularly unique expression here and occupies a prominent place in the estate’s vineyard, complemented by Chardonnay and Pinot Blanc.
All the vines come from mass selection and have an average age of 40 years. Dominique’s unusual sensitivity — combined with artisanal agriculture, deeply attentive to the balance of nature and the quality of the plant material — is manifested in the production of Champagnes of great depth and subtlety.
The Champagnes produced are named after Dominique’s great-grandmother, Marie Courtin, whom the producer wanted to honour as an enlightened and avant-garde woman of the countryside.
