Old Auvergne Gamay vines grown on pozzolan (volcanic ash), siutated on the Puy de Corent. Direct pressing after harvesting, fermentation with indigenous yeasts, vinified and matured in vats. Malolactic fermentation carried out. Unfiltered wine
