100%Muscat a Petit Grains, 1980’s vineyards, natural fermentation without the use of correctives, the lees are recuperated and slowly added to the wine to keep an ongoing fermentation. The wine is then moved to a low-temperature vat until the coming of Spring’s heat where the wine ferments again until reaching the desired 5,5% alcohol. At that time, it is “travasato” after filtration and light addition of SO2 in a pressurized vat where it stays for 2 weeks before bottling with CO2
