This cuvée is a blend from two plots: one located on marl-limestone soil, the other on an east-facing slope characterised by predominantly clay-limestone soil under a layer of loess (powdery silt composed of fine limestone and siliceous particles carried by the wind during the cold periods of the Quaternary).
Hand-picked in mid-October. Maceration for 8 days in whole bunches, before pressing in a pneumatic press. Fermentation with indigenous yeasts without temperature control. Spontaneous and complete malolactic fermentation. Several rackings and no fining.
Aged on fine lees in old century-old oak casks for 9 months without the addition of sulphites. Filtered through cellulose plates and bottled at the end of July 2022 without the addition of sulphites.
