35% Côt, 35% Cabernet Franc, 30% Pineau d’Aunis from plots with flinty clay and clay-limestone soils located in villages in the Cher Valley, such as Chissay-en-Touraine. Hand-harvested, fermented with indigenous yeasts in stainless steel vats at low temperatures.
