Acios da Xesteiriña is born from a single plot of land located in Xesteiriña, in the village of Sanxenxo in the “Valle del Salnés”. Jose Manuel Domínguez, the third generation of farmers linked to this hidden piece of land, is a captivating gardener and lover of all plants, before becoming a winemaker.
An agronomist by training, he worked with various producers and sold grapes to other bodegas before deciding to vinify his own grapes, encouraged by wine lovers like Adrian Guerra, who motivated him to value the dedication he has shown for 35 years to this vineyard planted on a granite plot of land known as Granodiorita de Sanxenxo, which is particularly suited to vines.
From the outset, the natural approach to agriculture, dispensing with herbicides and synthetic chemicals in a very humid area, the choice of an old Albariño clone, and the concern to minimise treatments (half of what is usual in the area) have led to the production of grapes with a unique character. An attentive and sensitive observer of natural balances, José extends this approach in the way he vinifies, accompanying the wine to let its origin express itself as freely as possible. The wines ferment without temperature control, with indigenous yeasts and are aged in used wood and stainless steel.
Austere in its youth, with a marked salinity, Xesteiriña is a wine that reveals its fresh and humid Atlantic origin and will evolve harmoniously in the bottle, revealing the small utopian island cultivated by José.
