Michel Théron, originally from Minervois north of Carcassonne, went to the Médoc in 1988 to train, and his encounters with Stéphanie Destruhaut and the Médoc terroir transformed a journey of discovery and wine training into a move to Arsac, in the south of the Margaux appellation, at the end of the 1990s. They started by finding a small plot of 0.5 hectares of vines in Arsac and now cultivate 7.75 hectares of vines, divided almost equally between the Haut Médoc appellation around the village of Macau and the other half in Arsac in the Margaux appellation.
Haut Medoc wines come from the Macau terroir, consisting of fine, sandy, well-drained gravel that warms quickly, planted with Cabernet-Sauvignon, Cabernet Franc, Merlot and Petit Verdot.
Margaux wines come from two sub-zones:
– the ‘Tertre’ sector with coarser stony gravel above a clay layer that gives the wine power and energy
– the ‘Poujeau de Perrin’ sector, which has a sandy surface layer with gravel and quartz.
The agriculture is certified biodynamic, but the most important thing for them is the sensitive interpretation of each of the 16 cultivated plots and a keen eye for their nuances, approaching the wine in its broader cultural and natural environment.
The kindness and humanity of this couple was the key we needed to finally introduce the Médoc region to the Goliardic universe. The finesse and depth of the wines confirm the Medoc’s unique ability to reveal the sapid side of Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot when planted in the right terroirs and cultivated with subtlety and precision.
