Blend of Sangiovese, Canaiolo and Colorino from the Carnaschiali, Valloni and Vignone vineyards, between 260-280m above sea level in sandy, silty and clay soils rich in limestone of alluvial origin.
Parcel fermentation, after destemming, maceration with pumping over for 15 to 25 days, depending on the harvest. Light pressing into cement, where it spends 10 months with fine lees.
Racking with blend to stainless steel, the wine is then bottled without filtration or fining, with minimal doses of sulphur.
