100% Chenin Blanc grown on clay-limestone soils (deep clay and chalk) from a selection of plots in Vouvray. The vines are 40 years old.
Pressing in a pneumatic press; fermentation in 620-litre barrels for up to six months, without undergoing malolactic fermentation.
Aged on the full lees, always in 210-litre barrels, for 6 to 8 months.
