Curral Teles: the human influence on wine with different types of grape varieties, vinifications and ageing.
From the Upper Douro, with the Touriga Francesa, Roriz and Tinta Barroca grape varieties. Vinification used by the Romans and the Cistercian monks – whole red grapes crushed for 3 hours in a calcatórium. Pressed in a vertical press and fermented and aged for 8 months in cement vats.
