The human influence on wine: different grape varieties, vinification methods and ageing.
Blend of grape varieties. Half of the grapes were vinified using the ‘classic’ method in cement vats and the other half were trodden for 3 hours in a calcatorium. The two blends were aged for a year in cement vats.
