A mixture of apple varieties (mainly Querina and Bravo Esmolfe) and pears (essentially Pêra Rocha, Morettini and Victoria) from the Encosta da Quinta orchard, pressed and fermented in vats, ending in the bottle, ‘Ancestral method’. Slight addition of sulphur dioxide before fermentation.
