“We use the name Les P’tits Vélos to refer to our sparkling wines.
‘A pignon fixe’ refers to when the second fermentation is carried out using the traditional method, that is to say, using a liqueur made from our own musts.”
100% Chenin: 70% from 2022 + 30% solera, no dosage. Vines aged 10 to 30 years from plots in Jasnières and Coteaux du Loir Blanc on flinty clay soils over tuffeau.
Pneumatic pressing, natural cold settling, natural fermentation with indigenous yeasts. The base wine is aged for 1 year in 620-litre barrels on fine lees and for 1 year on racks before disgorging.
Bottled in December 2023, disgorged in May 2025.
