Soldavini, Soldier of Wines, a predestined name, has become one of the telluric figures of the goliardic family in just a few years, with an explosive mixed culture of Latin verbal exuberance and some typically Argentinian traits of beneficial madness.
From Fedellos do Couto to Saiñas, and now solo, Pablo is the tireless cultivator of the vine. On vertiginous slopes, on gneiss, granite or schist, Pablo jumps from vineyard to vineyard between Lumeares, A Teixeira and Cristosende, to express the simple and the complex of wine that can be food, joy and soul at the same time.
He is responsible for 3ha spread over more than 20 old vines co-planted with Mencía (Jaen), Merenzao (Bastardo), Brancellao (Alvarelhão), Mouratón (Juan García, Negreda, Tinta Gorda), Garnacha Tintorera and Caiño in the reds, and Godello and Palomino in the whites. In partnership with fellow winemakers, he also produces an Obranco de Albariño from the Rías Baixas, and a Simple red, simply to drink.
Very regular in the vinification of his wines, the focus is always on the best health of the grapes in the field for less handling in the cellar, macerating the wines lightly, like a careful infusion, and avoiding the addition of sulphur until bottling, after an ageing period that can range from 6 months for Obranco and Simple, for their lightness and freshness of fruit, to Tanis or Sabela, reds with greater structure and longevity.
At Ribeira Sacra, Pablo consecrates the devotion of the manual winegrower who doesn’t neglect any stage in the making of genuine wine.
